How to make the eggplant chips: wash and dry the eggplants well and cut them into long, thin slices. We salt them and let them rest for about 30 minutes. Ingredients:

– Olive stone flour

How to make the pizza dough: in a bowl, add the olive stone flour, salt to taste and make a hole in the middle. We mix the yeast, water and our variety of Frantoio Extra Virgin Olive Oil. We knead the mixture and add water little by little until we obtain a homogeneous dough. We let the dough rest for 1 hour, covered with a cloth, so that it can rise. Then, we knead a little more, stretch it and it will be ready to put on a tray with a little EVOO on the base so that it doesn’t stick. Add the ingredients that you like the most and put it in the oven.

Gluten-free croquettes

Ingredients:

– Leche

– Cornstarch

– Sal

– Nutmeg

– Eggs

– Gluten-free breadcrumbs

– Roasted chicken breast

The first thing we will do is prepare the bechamel. We heat part of the milk in a saucepan and dissolve the cornstarch in the other part of the milk.
