In this exquisite cream, the intense flavor of celery is harmoniously combined with the softness of the potato and the creaminess of the cream. The recipe allows flexibility in the choice of additional ingredients, such as onion, leek or a combination of both, to suit individual tastes and the availability of fresh produce.
Ingredients
For 4 people:
– 400 g of celery
– 1 small onion (approx. 100 g) or half a leek
– 300 g of potato
– 500 ml of vegetable or chicken broth
– 80 ml de nata
– Salt and pepper to taste
– Extra virgin olive oil
Instructions
1. Preparation of celery: select and cut the top, softest part, for use in the recipe.
2. Cook the base: sauté the onion or leek with olive oil in a large pot until transparent.
3. Add the celery and potato, cover with broth and simmer until tender.
4. Blend: once cooked, blend the ingredients until you obtain a smooth texture.
5. Add the cream: add the cream to the cream and heat gently.
6. Season to taste: add salt and pepper, adjusting according to personal preference.
7. Serve: enjoy this delicious cream accompanied by croutons, cheese, walnuts or green apple, according to the preference of each diner.
