Ingredients
– 1 medium pumpkin
– 1 onion
– 2 cloves of garlic
– 1 carrot
– 1 potato
– 1 liter of vegetable broth
– Salt and pepper to taste
– Olive oil
Instructions
1. Wash and peel the pumpkin, onion, carrot and potato. Cut all the vegetables into small pieces.
2. In a large pot, heat a little olive oil and add the onion and garlic. Sauté until golden brown.
3. Add the pumpkin, carrot and potato to the pot. Cook for a few minutes, stirring constantly.
4. Add the vegetable broth and season with salt and pepper to taste. Let it boil and then reduce the heat. Cook over low heat until the vegetables are tender.
